The dish: Jumbo prawns hand-rubbed in a selection of dried chilis and served with mangoes, tomatoes, cucumbers and cotilla cheese with choice of dressing.

In Flight is a regional aircraft caterer operating from airports in Arizona (Scottsdale, Phoenix, Deer Valley, Falcon Goodyear and Williams Gateway), Southern California (from Orange County to San Diego) and New Mexico (including Albuquerque and Santa Fe). The company also provides personal shopping services. The caterer-whose clients range from corporations and fractional owners to sports teams and airline charters-provides periodic coaching to flight attendants on such topics as site preparation, wine pairing, heating and cooking. While In Flight features an extensive menu, it does accommodate custom orders. It will supply VIP silverware, glassware, china and linen upon request.
